I have a 2.5 year old male Hermann's named Merlin. I have had him since he was about 45g, and he is now 550g. I have raised him using the advice on tortoise forum. He has no pyramiding at all. He has been in an open top
tortoise table since he was about 200g (which @HermanniChris said was okay, before I did it). I was worried about pyramiding starting, but he has more than doubled in weight since then and is doing wonderful! He spends summers outdoors.
