I am wondering which seeds to plant to feed a hatchling Sulcata.

Are these ok/good? Please add any that are better!

Nasturtium
Microgreens
Arugula

Also, Which soil would be best to plant in?

I also got a grazing tortoise seed mix and Mazuri LS tortoise small pellets.

A variety of grocery store greens are good. Tom lists them here in the "Feeding" section: https://tortoiseforum.org/threads/the-best-way-to-raise-any-temperate-species-of-tortoise.183131/
If you must use grocery store foods, favor endive and escarole as your main staples. Add in arugula, cilantro, kale, collard, mustard and turnip greens, squash leaves, spring mix, romaine, green or red leaf lettuce, butter lettuce, water cress, carrot tops, celery tops, bok choy, and whatever other greens you can find. If you mix in some of the aforementioned amendments, these grocery store foods will offer plants of variety and fiber and be able to meet your tortoises nutritional needs just fine. I find it preferable to grab a few grapevine or mulberry leaves, or a handful of mallow and clover, or some broadleaf plantain leaves and some grass,
Here is a broader list that includes weeds and grasses by Yvonne G: https://tortoiseforum.org/threads/sulcata-diet-sheet.52677/
This is a cool guide from Kapidolo Farms to see the Calcium to Phosphorus ratio of different plants. Try to keep the ratio to at least 2:1 (twice as much calcium as there is phosphorus in the plant): https://tortoiseforum.org/threads/w...-published-nutrient-list.161833/#post-1542141

I haven't use this site much but I think it also has information on plants and their nutritional content: https://www.feedipedia.org/

There are some vegetables with goitrogens like broccoli that you shouldn't feed too much because it can interfere with thyroid function. A healthy thyroid helps with metabolic function.
