Tortoise not really eating

I have a new baby tortoise I’ve had him for a week now. He will eat what I give him but he will only eat a bit of the leafs and then leave them what does this mean??

the foods I’ve been giving him are: Lettuce, rose leaves, water cress, dandelions, and grape leaves mainly all grown in my green house. If anyone has any other suggestions it would be much obliged.

Food sounds fine. Find out what he was eating prior. They're really picky when it comes to any changes and can take time to adjust.

Also please advise temp, humidity, species
