Help! Stubborn russian

My tortoise flat out refuses to eat his new food. He sniffs it in the morning and then runs over it and throws it all in the dirt and laughs at me (or it seems like it).
He started getting really inactive from not eating (about 5 days) and I gave in and gave him just one piece of collard by itself and now he's walking around again and protecting this leaf with his life.
What should I do? Pic is of his new food nice and mixed in with his old food. And him guarding his leaf. T_T

Your just going to have to cut the new food small and put on the old food . If he doesn't it then put a smaller amount if new food . Keep trying .
