I have heard that you can get some calcium powder and sprinkle it on their food, put it in a small dish so they can have at it as they please OR get a cuddle(cuttle?) bone. Which would be the best option? Or is it all just trial and error depending on the tortoise?

Either way is fine. Some will give their tort some on their food, so they know they got some and also give them a cuttle bone incase they want or need more.

Age, size and sex? Diet?

For growing babies, I like to sprinkle a little calcium powder on their food two or three times a week. Same for adult females during the laying season. For adult males, and females in the non-laying season, who are all getting a good calcium rich diet, I don't supplement any calcium.

Either way I'd leave some cuttle bone out and available. If they don't need any calcium, they just won't touch it.
