Plants for outdoor kiddie pool enclosure?

I'm looking for some suggestions on a few seeds I should plant for an outdoor kiddie pool enclosure. I'm also wondering what sort of soil I should use? Currently the enclosure has coco coir, I live out in Arizona so it gets very hot out here. Any suggestions?

I know that I cannot use potted plants from the store since they have pesticides in them.
