Does anyone have the Ca:p ratio charts which describe these greens? I used to have it somewhere but I've looked everywhere and can't find it.

Calcium:phosphorus. I don't know why that smiley face appeared.

To calculate the ratio, all you need is to find the total amount of calcium and phosphorous in a food at any good site. I like http://nutritiondata.self.com/

So... raw kale has 90.5mg of calcium and 37.5mg of phosphorous, so you already know the ratio is between 2 and 3 to 1. I personally always aim to keep the phosphorous number at 1 just to make things easier, so you divide 90.5 by 37.5 to get 2.4:1 for the ratio.

Mustard is 57.7 and 24.1, so 2.4:1
Collards are 52.2 and 3.6 so 14.5:1
