Edible parts of veggies question

I was wondering what part of the veggies i can feed my tort. For example the first fresh veggie i bought for him was collard greens, i have only been chopping up the leaf part of the collards now, but should i just chop the whole thing up for him. And if so does that normally go the same for other veggies as well?

I have a baby leopard, 9 months. I only give the leafy part.

I give my Russian the whole thing. I give the greens a good rinse, then just toss them in! Tearing at the stalks will help keep the beak wore down. I even give the entire thing to my yearling Sulcata, takes him a bit but he will munch the whole thing down!
