As I am feeding my son I wondered - Would it be ok/safe to mix baby food with my redfoot and or box turtle's food on occasion for the fruits and veggies that my family doesn't eat enough of for me to buy fresh or just on occasion when things are out of season?

I wouldn't think it would be a good idea for processed food to take the place of fresh, natural food.

When I had some baby YF tortoises I had a hard time getting them to eat, so I mixed up some of the more exotic strained fruits with their greens. This got the babies eating. I used the baby food for a month or so, then gradually tapered off.

You don't have to buy a whole bag, you can just buy one peach this time, and when its gone, buy a pear, then an apple, etc. They don't need a whole bunch of fruit anyway. I only feed my YF tortoises fruit about once a week.
