Tortoise shell

Is this a healthy tortoise shell? I can see how it's ever so slightly pyramided which means there is something wrong with their diets, is it a healthy shell though or do I have something to worry about, they have been fed on pellet food since they were born, I only got the, a few days ago and have been giving them lots of variety of weeds and giving them a treat once a week...

Do they have a water dish in their enclosure? The tort looks a bit dry

That' is a picture of a captive bred Russian tortoise that hasn't had the benefit of a humid environment, a large space to exercise in, the correct diet and UVB. All those thing are necessary to grow a smooth Mediterranean tortoise.
