Tortoise not eating

I was feeding my Russian Tortoise spring mix and he was always eating as soon as I put food in the bowl. I wanted to switch to something with a little more nutrients. Since it’s hard to find many things in the winter in Pittsburgh I bought kale and collard greens. He literally ate one bite and hasn’t gone towards his food again since then. Should I just switch his food back to spring mix and wait till winter is over to get something with more substance or is there something else I should be able to find in stores now?

When you want to introduce a new food, introduce a little at a time mixed into their food they’re used to eating and at a little more every day or week. He will eventually get used to the new stuff and chow down like usual
