Is it normal for my baby cherry head to be asleep all the time I've checked to make sure he's not dead and he's not but it just seems strange.

Babies do sleep a lot, often most of the day, but not all the time.
He should wake to eat and maybe excrete, but perhaps not much else.
I agree with leigti, if he's totally inactive, low temperature is the most likely explanation.

Agree, too cold or too hot will make them stay hidden or sleep a lot more then what is normal. Babies do sleep a lot. But they should come out to eat, roam a little bit them back to sleeping. Check temps and humidity and that the housing is correct and be sure you are not using a coil bulb. You should also be taking him out every day to soak him in warm water for 20/30 minutes and that should make him want to eat and roam some.

I agree with the members who said cold weather may stop a tort from eating. In Winter for instance, they lose appetite.

And a very warm welcome to the forum.

It came with the enclosure I bought
Hi. Think you need to get a digital thermometer. You can get them off eBay dirt cheep. Obviously the sky is the limit if you want to buy a really good one. But for £4 you can get a relatively accurate one that reads humidity and temps. Those clock face type are not very accurate at all.

Also, placement of the thermometer is important. It should be on the floor, not up on a wall.
