So our Russian was an amazing eater after we got him. His previous owner only fed him red leaf lettuce and romaine lettuce and had him a really small enclosure. After we got him we were feeding him a wide various of broad leaf plants suggested from all the forums and books. In the last two weeks though he has refused to eat anything but mustard greens. He will literally go on a food strike. So we give in after two days of not eating anything we place in from of him. (We have had him for six months, never an issue with eating before.) Any suggestion? Anyone else come across this?

Chop up all the foods including more of the mustard greens then the other stuff. Spritz with water which helps the foods to stick together. Each meal use less and less of the mustard and more of the others until he is eating all the greens and you are not adding any more mustard. Then once he has a few days or so of all the other foods, add in just small amounts of the mustard a couple times a week.

Perhaps he's full after six months of good eating. :)

Tortoises can be pretty finicky; it's not unusual for them to get fixated on one food. He can go much longer than two days (or two weeks) without eating and not come to harm. Try what Wellington has suggested and also remember you are the parent here. The tortoise isn't opening that bag of mustard greens by himself. I know it's not easy but stay strong! :)

You definitely aren't alone. My Russian is a great eater but she changes her mind about her favorite food seemingly every other day. She is also starting to slow down in her hunger and weight gain as spring ends. If nothing has changed in his enclosure, just keep offering food and make sure he's got access to water.
