Food and Droppings

I recently got a greek tortoise from Petsmart.She's a girl but I haven't named her yet. Anyways, the girl that helped me wasn't very helpful, oddly enough. :p
So i was wondering about how much food is a good amount to feed my tortoise. How much is too much or too little?
I've been feeding her clovers, dandelions, and a small mixture of carrots, cauliflour, mixed greens (no spinach or red leaves), and raddish top greens. And some supplement a few times a week.

Whenever I give her baths she usually poops and pees which i heard is normal because baths relax them. I wanted to know what the right consistency of tortoise poop is?
Also, I know that the white excrete is called urate and that some is okay as long as it isn't gritty or greyish but how often is too often for that to occur?

A petsmart employee was not helpful? I am shocked I say, SHOCKED.
Poop should basically look like cigars, nice and firm.
Urates are not a problem since they excrete them when they have access to water, so I don't think there is to much. I hope that made sense.

How big is your tort? My Greek is about 7 months old, and she eats a stack of greens approximately 1.5x her size, split into two meals over the course of the day.

About 5 inches long. Petsmart said she was anywhere from 1-2 years old.

She was helpful, just didn't know very much. And thank you for your help. :)
