Had written to TTT a while ago and got this response. Hope this helps.

Regarding Wheat Grass – this is Triticum aestivum, and it should be fine to feed to a tortoise, but only feed the leaves. My only question about it is whether it might be too high in protein, and I can’t seem to find anything to indicate that it is, but as with all foods moderation is the key, so I would only feed this as a part of a larger and more varied diet. We’ll try and get an entry for Wheat Grass added to the database soon, as we have had a question about it before."
