I live in Johannesburg, and I can't find any leafy greens. Endive, escarole, romaine, carrot tops, dandelions, I can't get them. (If you ask for dandelions, people will think you are crazy.)
I can get lettuce (which is quite ambiguous, you never know what type) and kale.
Any advice?

The darker/more colorful a lettuce is, the more nutrition it contains. Choose heads that are quite mature (and even what you would consider "too tough" to make a salad): mature leaves contain the most fiber and nutrients.

Kale is safe as long as your torts are well-hydrated (they pass liquid urine).

Thanks all! A little update: Zvezda is grazing more and more. She keeps eating ferociously, she HATES kale, but she liked the lettuce. Rocket, and dandelions have been planted. Where I am, there are loads of purslaine, and other weeds which are high in oxalates, no pricklypear leaves, will keep updating. Yesterday during her second soak, she drank loads of water, in todays soak she peed in it, which is good!
