If you like "gooey-sweet" apples with a little 'tart' try this.
In 'larger' pan combine:
8 Granny Smith apples - peeled and sliced
1/2 cup ( packed ) dark brown sugar
2 tblsp white sugar
1/2 cup apple juice/cider
1/2 lemon squeezed over apples
1 tsp cinnamon
1/8 tsp ground nutmeg
1/8 tsp salt
Cover and cook over medium heat until it begins to bubble ( 15 minutes? ) - turn down to simmer - * stir occasionally.
After 1 hour add:
1/8 tsp ground cloves
'pat' of butter
1/2 tsp vanilla
Stir * and continue to simmer for another 1 hour 45 minutes
Sample for 'tenderness' and sweeten to taste with dark brown sugar and continue to simmer another 15 minutes or until "sweet and gooey".
