Chinese Elm leaves are edible. We used to feed the tree trimmings to our rabbit and he consumed all he could get. Where I live the deer browse any Elm leaves and twigs they can reach. This time last year I still had an Elm in the yard and I offered young leaves to my torts. They ate them along with everything else but didn't show any preference for them.
