I've used 1/2" exterior plywood for my tort habitats.

Yes they stay very small, yours are adults. They are the second smallest tortoise in the world .
I could not see photos to tell there sex, my phone would not down load your pictures for some reason.
Males stay small and max out at 4 inches.males have longer tails and a small concave on bottom of shell. Females have a flat bottom shell and a short tail.

I can see pictures now, to tell the sex I would need to see the bottom of shell and the tail, to determine the sex.

We're are you located? In the United States those tortoises are very rare and breeders pay a lot for them.

Actually these tortoises appear to be an invalid species of the Egyptian tortoise and are referred to as Testudo werneri, hence the lighter-sand-gold color and lacking of the plastral "V" markings at least on the second specimen (they can sometimes have them). Certainly are not Greek tortoises or any subspecies of T. graeca so be sure to accommodate them correctly or you will surely lose them. These are a sensitive species and appear to be originally wild caught based on their general appearance. In the USA, T. kleinmanni are relatively rare but definitely obtainable over some other Testudo rarities but T. werneri are unknown.

You are very lucky to have the Egyptian tortoise.
As Chris mentioned the wild caught ones can be very delicate.
Very few wild caught adults are left in the USA.
