Yvonne knows this one. It think its called "dock", but I am not sure.

Oh, man! Dig these out before all those seeds drop to the ground. It's quite invasive and very hard to get rid of once established. It has a very long carrot-like root, so you have to dig deep. And don't cut off the root with the shovel, because even a little piece left in the ground will grow a new plant.

Evidently people can cook and eat the leaves, however, it is quite toxic to cows, horses and other grazing mammals.
