I've called every garden center and nursery remotely near me and none of them sell orchid bark/fir bark. Is it fine to just get the big bags of cypress mulch from home depot for my baby sulcatas enclosure?

Cypress mulch will be fine. Make sure the cypress mulch you purchase is the type that is grounded down to a smaller size because the long ones will stab the hell out of you.

Coco coir is also a very good substrate choice for small burrowers and baby Sulcatas.

Ask them to order it for you. Ask them what people who grow orchids there use.
