I'm sure torts are sensitive to noise because I've seem him/her stopped moving when hearing something loud, they have reasonably good eye sights too. My little tort can go for well over a 100 feet on a grass field in just a couple of minutes & I believe they should be let out to walk around outdoors for exercises, my RF doesn't like to move much if kept in it's enclosure because it's not stimulated.

My russians know it's food time by hearing. During the evening in summer or on hot days they are still turned around facing the other way in the cool shade of their burrow. I have to take these bricks of the chicken wire top of their pen in order to put food into the tray, and the bricks make loud noises as I'm dropping them off to the side. As I do this the russians slowly turn around and start coming out of the burrows as they hear the familiar sound that means food.
