If I were to give my torts a treat of a fruit type, I give them a strawberry.
The thing is with apple is it's acidy and it has oxalates, prevention of absorbing calcium.
The same goes for cucumber.

I personally do not like terrariums, breeding ground for bacteria and parasites,
As most members on here know that I do not have the luxury of a secure garden (working on it) so my preferred means of habitat are huge rabbit cages, with their respective heating and lighting, etc etc, and in the summer I just roll the cages out and bring them in if I go out or when I go to bed,

As you can see, mixing up the diet is best. Sometimes you can mix greens they are not as fond of, with greens they like, chopped up to disguise them. Flowers are good, like pansies, nasturiums, geraniums, snapdragon, campanula (bellflower), etc. Seems like the sweeter foods like apples and strawberries are better as treats, but ok.
Did you say your enclosure was 4x 1.5 feet? How many inches is your tort (measured the long way, but straight across, don't follow the shell curve)?
