Hibernation

The woman at the store told me not to hibernate the tortoises until they are atleast 3-4 years old... Whereas other sources told me that if they are healthy then why not ?
How do I hibernate a tortoise ? I have no experience doing this since I got these tortoises a month ago .. I am good with husbandry and diet etc but hibernation is something quite new to me.. I know a few things so i am not completely clueless. ..
I understand that there is a period where you don't feed your tortoise but give it baths so it can have a full bladder , I also understand that you need to keep them in a fridge and have to keep the temp between 3-10 degrees Celsius .. I don't know if the 3-10 Celsius is right but I understand its something along the lines of that .. Could you give me some advice on how I'd tackle this ?

If you just recently acquired the tortoise then it is good practice to not brumate the tortoise....you have not yet been with the tort long enough to get to know its normal behaviors and such---this is important to have learned so you will notice if the tort begins to act out of sorts, you know?

This is the time that you can also use to educate yourself in a variety of brumating technics so that you can become comfortable supporting this natural part of their life cycle....

You I believe live in a place that the weather does get cold enough to allow you to elect a dry dark quiet area (free from any mice or rats or raccoons and such--as these can and do prey on brumating torts) to allow your tort to brumate....without the use of a fridge (that process is a skill/technique to learn even over and above the natural support of a brumating tort.....
