There's a pretty nice site called http://www.thetortoisetable.org.uk/site/plant_database_14.asp and you can look through there to find plants that are edible. Try to choose plants that do well under low light. A few that come to mind are hosta, pansy, viola, micro greens, any of the squashes, etc.
Spider plants do great for me in my enclosures. Aloe also. I leave them in pots. I have seen several people plant hostas as well. I am going to try this directly in the substrate. I also plant grass directly in the substrate. This gets eaten very quickly.
Spider plants do very well inside indoor enclosures, I can vouch for that. I have one planted in my guy's house straight in the substrate and it is quite happy, though it only gets artificial light. Pegasus sometimes nibbles on it, but not often, it's actually growing bigger!
