When you have the correct diet, as recommended on the caresheet, then I'm sure you'll find more than enough poop!!
Some plants in the enclosure would make him feel more secure and also help with humidity - see www.thetortoisetable.org.uk for tort safe plants - spider plants are popular, but if shop bought - repot in chemical free soil and give time for any sprays or fertilisers to grow out.
Be carfeul with vits, calcium is good for shells and growth but only a small pinch a couple of times a week or he could end up with kidney stones I believe, and they need uvb to help absorb it, Cuttlefish bone as used for birds (with cage clips removed) can be scraped onto food or left for them to munch on but my tort tends to ignore it most of the time.
There is an eye cream you can use which may be more effective and soothing than powder but I can't remember the name of it - maybe @yvonne can help with that.
I use an arcadia D3 mvb which I have been happy with - also used the Arcadia mini d3. Do you have the space to make an outside enclosure for your tort so he can get natural uvb from the sun? Must be safe from predators - including birds!
Some people use kiddies paddling pools for short spells of supervised outside time when warm enough.
