How old big is Steve and what species is he?
How big is the enclosure? I take it, it has all the fixtures inside?

Orchid bark or coconut coir is the best substrate for holding humidity. The combination of the two with coir on the bottom woukd work great.
Pothos plants, is a safe plant. I can think of any others right now. Maybe others will have ideas.
Any weeds you have that are safe you could dig up and plant in the enclosure too
