Food farming advice needed

Hello all. I have decided to grow some of my own food and ordered some broadleaf mix from Tortoisesupply as well as some dandelion and clover seeds to start with. My concerns involve the harvesting of the weeds once they're grown. Do you simply tear the leaves off or uproot the entire plant? Do they eat the stalk and flower or just the leaves? Anyone care to share their successful farming tips?

I have a long planter of testudo mix. It takes about a week or so to get back up to 8" tall or so when I cut it. So I just grab a handful and then cut with scissors off to about 2" high left in the ground. I harvest enough daily for my tortoises and need about 2 sq ft of area per day harvested. Since I made a planter 6" wide by 30 ft long, by the time I reach the end, the starting end has grown back and I start again. with a single Russian, you would probably only use about one handful a day= less than half a sq ft planter area!
