If the tortoise is nervous being in a new home there is need to introduce slowly, yes babies should be bathed everyday but if she is nervous there is no need to do it everyday as long as she has moist soil and access to water until she has settled a little better
She is gorgeous! I wouldn't waken her for a bath, let her wake up herself and then speak to her before trying to touch, then slowly introduce your hand, this lets her see you are to be trusted, then you can try stroking her shell. Baths aren't necessary everyday but a few times a week are fine...
