I assumed that hay was used in winter when grass wasn’t available.
The bulk of my sulcatas diet is different grasses. I have not feed him any hay.
1) Does he need hay in his diet?
2) If he does, can I try and mix it with grass to get him used to it

No, he doesn't NEED it, it just helps when fresh food isn't available. And grass hay is best.

He doesn't need it, but I believe it can help keep their beaks in check. Also note that young tortoises typically shouldn't be fed it, because they can't chew it yet. Hay can also be used as bedding, as it is cheap, safe, and edible. They can still burrow in it, so it is worth a shot.

Grasses are best. If grasses aren't available due to climate and weather, grass hay is a suitable substitute.
