Baby hermans tortoise behavior

I've recently purchased 2 baby hermans tortoise (maybe a few months old) and was wondering if their behaviors that I've been examining are normal.

They both sleep for the majority of the day and wake up every once and awhile to explore or graze on their meal then go back to sleep. Is this typical of baby tortoises? Just worries me a bit because one of the baby is more active while the other one sleeps more.

I've noticed that their eating behavior is different from other pets I've kept. The tortoises seems to graze whenever they feel hungry. So should i just keep food within the enclosure and whenever they want to eat they'll eat? Or should i have a set time?

Basking: 94-96F
Night: 70F
Ambient: 80-85F
Cool: 75-80F which is underneath the driftwood or the humid hide.
Humidity Day: around 20% (hard to keep it any higher due to lights)
Humidity Night: 60% but 70% inside the humid hide.

They are housed in a 90 gallon tank as of right now and their diet consists of mainly romaine lettuce, dandelion greens, some kale, collar greens, alfalfa grass, and mazuri pellets; I am also growing some weeds that i bought from tortoise supply. Also, I dust the food with tortoise repashy multivitamin(every other day)and zoomed repti calcium (3x a week).

I would get a thicker layer of substrate(at least 4 inches), and pour a giant bowl of water in and mix it in with the substrate, and then spray several times a day(I assume you were already trying that). You might also have to cover the tank with plastic wrap or foil. That could be part of the sleeping problem.
Keep in mind that those disk thermometers are extremely in accurate. I would use a digital one with a probe or a temp gun if you don’t already have those.
The rest looks good!

Yeah, I've notice that so I do use a temp gun that I've purchased from home depot to give you those readings. What substrate would you recommend that holds moisture? As of right now I just use eco earth coconut fiber. As for covering the tank with plastic wrap or foil, do you mean the entire tank on the outside or the top part?

I would plant more eatible plants in the enclosure. Some grass beside the heatlamp, small tortoise love to hide in the grass. You can take grass patches from the garden. You can also put some spagnum moss in their hide to encrease the humidity there.
Also make sure that one part of the enclosure is more cool.
