If you post a picture, someone may be able to help you out on figuring out if your tort is a red foot or cherry head.
As for bugs/protein, I would go with what Redstrike suggested. And I don't think cat meat is a good idea, although I have seen sites mention cat...
I haven't had my own red foot very long, but I would suggest a little more variety. Hibiscus leaves, collard greens, spring mix, dandelion greens, etc. My red foot is especially fond of squash/zuke flowers and my cherry head just realized they are tasty. I haven't tried other safe flowers...

I grew my own matt of wheat grass for the indoor enclosure. The outdoor enclosure has some wheat grass growing as well.
Dexter at first would nip at the grasses but never enough to be noticed as eating in any considerable amount. So it is just decoration for my torts.

I found 2 more mushrooms pushing upward out of the cypress mulch side. None are growing on the top soil side. And the cypress mulch is the same I have inside the indoor enclosure and there are no mushrooms growing there. Hm...
