The second one is bristly ox-tongue. Same family as sow thistles. If you want to be sure it's bristly ox-tongue, rub it on your shirt; it sticks like crazy! Safe.
Like Yvonne said, the third one is safe. It's prickly lettuce. It gets a bitter as the season goes on, so may not be liked as much when things get hot and dry. You might try the top leaves first, they should be less bitter. That weed is going to get really tall and seedy when it gets hot so be ready to pull or weed whack it when that happens!
