I live in Maine and I was just wondering what other things a tortoise can eat other than spotting mix, carrots and dandelion greens

Lots and lots and lots of things. Carrots and spring mix aren't good for all the time. And even dandelion shouldn't be fed in very high amounts :( Variety is key! http://russiantortoise.net/care_sheet.htm Please read that! It'll tell you everything you need to know.
Also, @Tom has a great list of food that they can eat. It's so long, I can't remember what it says :D

I would mostly avoid carrots. Too high in sugar to be used as a regular food. Here is a list of suggestions:
Mulberry leaves
Grape vine leaves
Hibiscus leaves
African hibiscus leaves
Blue hibiscus leaves
Rose of Sharon leaves
Rose leaves
Geraniums
Gazanias
Lavatera
Pansies
Petunias
Hostas
Honeysuckle
Cape honeysuckle
Leaves and blooms from any squash plant, like pumpkin, cucumber, summer squash, etc...
Young spineless opuntia cactus pads

Weeds:
There are soooooooo many...
Dandelion
Mallow
Filaree
Smooth Sow thistle
Prickly Sow thistle
Milk thistle
Goat head weed
Cats ear
Nettles
Trefoil
Wild onion
Wild mustard
Wild Garlic
Clovers
Broadleaf plantain
Narrow leaf plantain
Chick weed
Hawksbit
Hensbit
Hawksbeard

Other good stuff:
"Testudo Seed Mix" from http://www.tortoisesupply.com/SeedMixes
Pasture mixes or other seeds from http://www.groworganic.com/seeds.html
Homegrown alfalfa
Mazuri Tortoise Chow
ZooMed Grassland Tortoise Food

Thank you for the links and ideas. My tortoise is fussy on things I give her.

All of them are fussy if given a choice and/or not used to unfamiliar food items. It takes time and patience to get them eating all the right things.
