Indoor Growing Question

Hi All it's me again. Excuse the million questions I will ask before bringing home my new baby but I'd rather do it as close to correct as I can to start. I would like to plant some indoor plants that can be fed. While outdoors would be easier until I have an outdoor area built and protected, and my tortoise is big enough to stay outside in warm months this isn't going to work well. One it gets rather cold in the winter and they would die, and two I have a dog that would pee on them if not grown in a protected area. I found these two seed packets I'd like to grow: http://www.tortoisesupply.com/TestudoMix http://www.tortoisesupply.com/DryBrowsingMix but they are obviously intended for outdoor growth.

1) Has anyone had luck growing these indoors and if so what methods did you use?
2) In another 2 years when my tortoise can live outside in summer months and I can plant outdoors do these plants come back on their own in the spring and summer, or need to be replanted?

Our winters in Maryland usually span from November-March with temps below freezing on and off, and even early April can be chilly. End of April-October is primarily when outdoor foliage is growing and temps vary from the 70's-100 degrees with high humidity.
