So we got our red foot 5 days ago, since the second day she has come out of her hide for a couple of hours to eat and drink, she poops regularly, I'm just wondering if anyone can give me some pointers about being able to tell when she is settled in and happy with her surroundings.

Also we've barely handled her (only when we give her a quick inspection in the mornings to make sure she's OK). When should we start interacting with her more so that she gets used to us? Up to now she's just been left to do as she wants in her home as we don't want to stress her out while she settles.

Hatchlings don't like handling too much and it can cause stress which can interfere with eating, and cause illness. Your tort will get to know you daily though as you feed, soak, and replace water. Once their bigger they tolerate handling more but I wouldn't rush it.
