Need a huge amount of help!

Hi,
I have bought an 12 week old horsefield and he is my first tortoise. I got the set up with him from the pet shop and i asked them to tell me everything i need to know as a beginner. They talked me into buying things such as a heat mat and wood chip substrate which i have since read is bad for them. They have told me a lot of information that i now believe to be true and i want to be a good owner so i have come to here for help.
At the minute he is in a 3ft vivarium and i would like to know what substrate i should get him and where i can buy his proper food a they didnt think to tell me this.
P.s. Any additional information you think i may need would be greatly appreciated.

If we can see a picture of the enclosure it would help so much!! Most of the people here use Coco coir which you can find at Home Depot or lowes for $5.

Sorry, i Cant take a picture but i can try and describe it.
It's a 3ft long, well ventilated vivarium with two lights on the roof- one a basking lamp and the other is a UV bulb.
I have wood chip substrate a couple of inches deep.
A slate slab.
A water and food dish.
A hide.
